Flapjack Fiesta!

Who doesn’t like flapjacks? Come on, hands up, there can’t be many of you. Well, if you’re gluten free they’re basically like your best friend…sweet, reliable, fruity & you can’t get enough of them! I have tried so many different recipes over the years but here are three that have been inspired by some classic desserts.

Firstly we have the traditional Apple Pie Flapjack with a hint of vanilla to remind you of the pastry, plenty of sticky sweet apples, chewy raisins and a dusting of cinnamon.

Then we have the Banoffee Pie Flapjack for my kiddies, full of sweet bananas, sticky melty dates that taste just like caramel and a background of maple syrup.

Lastly drumroll for the Bakewell Tart Flapjack. Inspired by the Cherry & Almond Slices I made the other day these are full of plump cherries combined with the delicious almond taste of the frangipane and finished with the taste of buttery vanilla.

Super duper easy to make so get on with it people…

Flapjacks 3 ways

  • Servings: 24-30
  • Time: 30mins
  • Difficulty: easy

You will need this for the basic flapjack mix:
60g vegetable butterIMG_7906
50g soft brown sugar
100g maple syrup
110 porridge oats
1/2 tsp seasalt

You make it like this:
All the versions start like this:

  1. Melt the butter, sugar & syrup over a low heat until all dissolved together
  2. Some versions have additions at this point
  3. Mix through the oats & salt
  4. Some versions have additions at this point
  5. Bake at 180c for 15mins or maybe a touch more to get them golden
  6. Cut gently whilst still warm in the tin and then leave to cool in tin
  7. When cooled cut through completely and remove individual squares with a cake slice
  8. Leave to firm up on a baking rack

Apple Pie Flapjack addition after step 2:

  • 80g apple chunks baked in the oven at 180c for 15mins with 1tbsp agave syrup, 1tbsp lemon juice, 2tsp cinnamon and 1tsp vanilla bean paste
  • 40g raisins

Banoffee Pie Flapjack addition after step 1:

  • 50g chopped dates
  • 30g banana chips broken into small pieces
  • Mix into the hot butter, sugar & syrup mixture and keep on a low heat for 10mins until dates/banana has softened
  • Then add 1/2 mashed banana before step 2

Bakewell Tart Flapjack addition after step 1:

  • mix 100g packet dried cherries into the hot butter, sugar & syrup mixture and keep on a low heat for 10mins until cherriesย have softened
  • add 1tsp almond essence and 1tsp of vanilla bean paste to the liquid
  • add an extra 40g ground almonds to the oats before mixing through
